Tastes of Iceland: traditional bird dishes

Posted on May 24, 2009 by

Being Iceland an island, besides fish there’re a lot of sea birds and Icelanders have a great variety of ways of cooking them:
Lundi: roasted or smoked sea puffins; it is quite tasty and it looks like veal leaver;
Svartfugl: black guillemot
Heiðagæs: roasted pink legs goose
Rjúpa: white partridge of the North, typical Christmas food; this bird protected but many people hunt it anyway
